Sandwiches are beautiful, sandwiches are fine

I think this might be one of the best sandwiches I've ever eaten (definitely in the top five....but who's counting....). Made this the other night. It was originally supposed to be made with fish but what we thawed turned out to be chicken.

For two sandwiches:

One onion, sliced
2 small chicken breasts
Juice of one lime
Chili powder, to taste (I used 1/2 teaspoon, approx)
4 slices bread (I bought a nice loaf of fresh-baked asiago and cheddar bread)
4 slices cheese (I used gouda)
Half a ripe avocado, sliced

Caramelize sliced onion (this takes about an hour)

In a separate pan, fry chicken breasts in lime juice and chili powder.

Toast bread in toaster oven or under broiler. Add sliced cheese on top towards the end to melt it.

When onions, bread and chicken are done, assemble sandwich with avocado slices.
